Low carb cinnamon cakes that can be done in 15 minutes ! Easy, fast and super delicious ! Recipe adapted from Sonourished's '10 Low Carb Desserts' Tried and tested !
Absolutely delicious cakes ; by far my favourites , I personally do not need to bolus for these.
I get consistent results within 2 hours after eating these with a very slight increase in my blood sugar of about 0.5 mmol.
I like to make a tray of mini cakes I eat at least a couple straight away but they are good the next day as well; and even people on high carb diets love them and you get to share !

INGREDIENTS:
2 cup / 200g - Almond Flour
10 tbsp - Erythritol Sweetner
2.5 tbsp - Ground Cinnamon
5 tbsp - Coconut Oil
5 - Large Eggs
1 pinch of Salt
Approx Nutritional Info per cake:
(*will change depending o your ingredients add up what you put in and divide by no.of cakes you bake )
12 Mini Servings - less than 2 carb / cake
INSTRUCTIONS
ETA : 15 minutes
> Mix the almond flour, erythritol, cinnamon and a pinch of salt in a medium sized bowl.
> Add the eggs and the coconut oil and mix all together.
>Lightly oil a muffin tray with coconut oil and pour in the cake batter.
>Bake at 180 C /350 F for 10 minutes.
>Leave them to cool off for a bit, bolus if you need to and dig in !
